Take your number of buttons and assign tasks to them in order of importance.
This is the way I map my stick (which currently has a dick-load of buttons), which is quick, painless and easy. Everywhere else you can always orbit for a minute and set things up.

Your stick should focus on the stuff you have to do in combat where you have much smaller windows to do things.
It's mostly checking your armament panel and DSMS and typing things into the CDU, and unless you have touch screens with display export you use mouse and keyboard for that as well. Most of what you do before and after combat can also be done with the keyboard and mouse.
